Seed heads of broad leaf plantain (Plantago major) are picked while still mostly green and immature.
Chop fresh into salads, stir-fry, omelettes, or soup.
When dried completely, they can be ground whole, or stripped from the stem, as shown in this video.
No further threshing or separating is required.
Grind into flour, to use in breads, pancakes, biscuits, etc.
Blends well with a variety of other grains or seeds.
